Summer Comfort

Summer in the UK can be a little hit & miss, for those waiting for summer to show up here is a comforting quick meal that keeps the whole family happy (and healthy) mid week.

Prepare the table & the salad first.


Garden Pea Feta & Rocket Salad. - for 2 people.


x1 bag rocket - wash & spin

x 1 tea cup of frozen or fresh garden peas

Half a packet of feta cheese

Cold pressed olive oil.


Prepare the leaves & place in a salad bowl, steam the peas for 2 to 3 minutes, allow to cool, once warm/cool add to leaves. crumble the feta over the salad. Wait to add the olive oil just before sitting down to eat, serve with a ground black pepper & serve along side the soup.


Butternut Squash Soup for 2 to 3 people.


x1 butternut squash - remove skin & seeds & cut into cubes.

x4 sticks of celery - wash & chop

x1 leek - wash & chop

x1 tbs coconut oil

x1 thumb of fresh ginger or too taste. - remove skin & chop

x1 tsp ground cumin

x1 tsp ground coriander

x2 tsp turmeric

x1 tsp sea salt

Served with fresh chopped (washed) coriander or parsley & black pepper freshly ground.


Place all the ingredient bar the coconut oil (& serving ingredient) into a pot on the stove at a medium to high heat, cook until boiling and vegetables are soft. Remove from the heat allow to cool for 5 mins & place into a blender with the coconut oil, blend until smooth, pour into serving bowls & garnish ready to serve. Will keep in an air tight container for 2 to 3 days.
